I went to make myself a sandwich for lunch today, but then decided that since I'm home and have the time, I'd make something a little more interesting. As I looked through the fridge trying to find something to make, I came across some large multi-grain tortillas. The first thing that came to mind was a quesadilla, so that's exactly what I made. I used one of the large tortillas, folded it in half, and filled it with 1/2 cup of black beans, 1/3 cup of reduced-fat Mexican cheese, and about 2 tbsp. of chopped red onion. I cooked it in a large greased skillet, one half at a time so that it wouldn't fall apart, but once it was heated through the cheese held it together pretty well. I served it with some pear slices for fruit, and some salsa for dipping. I ended up not really using the salsa because I found it was too over powering, but the quesadilla itself came out great and was much better than a sandwich would've been.

Later this afternoon I had a Trader Joe's Organic Lowfat Vanilla Yogurt with some sliced organic strawberries mixed in. Today is my mom's birthday so I am unsure whether or not I will be eating home tonight. I haven't prepared anything for dinner so I guess it's all up in the air as of now.
