Hi everyone! Welcome to the Eat Like Me blog! I'm Emma- a Nutrition major & kind of a health nut! I'm really into eating healthy & nourishing my body. It amazes me how much food can really affect your life and change the way you feel. I've been into healthy eating since I was a teen and I wanted to share my interest with all of you! I'll admit that I have days when I do not make the best food choices but my goal is to just get back on track and stay healthy as often as I can. Of course, eating healthy doesn't mean I don't get to enjoy my food. There are lots of flavorful, healthy foods & recipes, and even desserts! Leftover potatoes (lunch 10.7.10)

Lunch was late today because I didn't get out of work until 2:30. I had planned to be home around 1 again, so I didn't bring a lunch with me. By the time I got home I was starving and just needed something quick to eat. I heated up the left over potatoes from last night's dinner, along with a Stonyfield Organic French Vanilla Yogurt and some chopped pineapple.
The potatoes were good, even better than last night, and the pineapple was perfectly ripe. It was a simple lunch but still healthy and I used up some of the stuff in the fridge so it all worked out. For a snack this afternoon I had my last Deep Chocolate Vitatop. The sun is finally out and it's a beautiful afternoon so I'm going to try and get outside for a little bit.
