Zucchini Bread
Ingredients:
- Natural cooking spray
- 1 1/2 cups whole wheat flour
- 3/4 cup sugar (I used Rapunzel Organic Raw Cane Sugar)
- 1/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 egg
- 1/3 cup unsweetened apple sauce
- 1 cup grated zucchini
- 1/3 cup oil (I used Extra Virgin Olive Oil)
- 2 tablespoons milk (I used unsweetened Almond Milk)
- 2 teaspoons vanilla extract
- 1/3 cup finely chopped walnuts
Directions:
- Preheat oven to 350.
- Mix dry ingredients.
- Mix wet ingredients.
- Combine.
- Add to greased 8-inch loaf pan.
- Bake for 50-60 minutes or until risen, golden brown & toothpick comes out clean.
